- 1 lb ground beef
- 1 onion, chopped
- 2 cups mixed vegetables (carrots, peas, corn)
- 2 cups mashed potatoes
- 1 cup shredded cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and cook ground beef until browned. Add onions, salt, and pepper; cook until translucent.
- Stir in mixed vegetables and cook for 5 minutes.
- Spread the beef mixture in a baking dish, layer mashed potatoes on top, and sprinkle with cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
Notes
- You can add diced tomatoes or spices for extra flavor.
- Use leftover mashed potatoes for convenience.
