Instructions
- Preheat oven to 375°F (190°C).
- Mix honey, soy sauce, garlic, mustard, salt, and pepper in a bowl.
- Rub the mixture all over the beef roast.
- Heat olive oil in a skillet and sear the beef on all sides until browned.
- Transfer to a baking sheet and roast for 45-55 minutes, basting with the glaze occasionally.
- Let rest for 10 minutes, then slice and serve garnished with herbs.
