Instructions
- In a large pot, brown sausage over medium heat until cooked through.
- Add diced onion and garlic; sauté until fragrant.
- Pour in chicken broth and diced tomatoes; bring to boil.
- Add tortellini, Italian seasoning, salt, and pepper; simmer until tortellini is tender.
- Stir in chopped spinach and cook for 2 more minutes.
- Serve hot, garnished with Parmesan cheese and parsley.
