- 2 pounds beef stew meat, cut into chunks
- 3 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 2 celery stalks, sliced
- 4 cups beef broth
- 2 teaspoons thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium-high heat.
- Add beef chunks and brown on all sides, then remove and set aside.
- Sauté onions and garlic until fragrant.
- Add beef back to the pot along with carrots, potatoes, celery, beef broth, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours until beef is tender.
- Remove bay leaves, taste and adjust seasoning before serving.
Notes
- For a thicker stew, mash some potatoes into the broth before serving.
- You can add peas or green beans during the last 10 minutes for extra color and nutrients.
