Ingredients

  • 2 pounds beef stew meat, cut into chunks
  • 3 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 2 teaspoons thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add beef chunks and brown on all sides, then remove and set aside.
  3. Sauté onions and garlic until fragrant.
  4. Add beef back to the pot along with carrots, potatoes, celery, beef broth, thyme, bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours until beef is tender.
  6. Remove bay leaves, taste and adjust seasoning before serving.

Notes

  • For a thicker stew, mash some potatoes into the broth before serving.
  • You can add peas or green beans during the last 10 minutes for extra color and nutrients.
