  • 1 pound smoked sausage, sliced into rounds
  • 4 large potatoes, peeled and sliced
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Peel and slice the potatoes into thin, even rounds. Slice the smoked sausage and set aside. Mince the garlic and slice the onion. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced sausage and cook until lightly browned. Remove and set aside. In the same skillet, sauté the onion and garlic until fragrant and translucent.
  3. Layer half of the sliced potatoes in a greased baking dish. Sprinkle with half of the sautéed onion and garlic. Top with half of the cooked sausage and a handful of cheese. Repeat with remaining ingredients. Drizzle remaining olive oil, sprinkle smoked paprika, salt, and pepper over the top.
  4. Cover with foil and bake for about 45 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden brown. Let cool slightly before serving.
