- 4 large bell peppers (red, yellow, green)
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes or salsa
- 1/4 cup chopped cilantro
- Sour cream and shredded lettuce for toppings
Instructions
- Preheat oven to 375°F (190°C).
- Slice the tops off peppers and remove seeds and membranes.
- In a skillet, cook ground beef with onions and garlic until browned; drain excess fat.
- Add taco seasoning and a little water; simmer for a few minutes.
- Stuff each pepper with the beef mixture and place in a baking dish.
- Top with shredded cheese and bake for 20-25 minutes.
- Remove from oven, garnish with diced tomatoes, cilantro, and serve with sour cream and lettuce.
Notes
- You can prepare the filling ahead of time and assemble just before baking.
- Use any variety of cheese to customize the flavor.
