  • 4 large bell peppers (red, yellow, green)
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes or salsa
  • 1/4 cup chopped cilantro
  • Sour cream and shredded lettuce for toppings

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the tops off peppers and remove seeds and membranes.
  3. In a skillet, cook ground beef with onions and garlic until browned; drain excess fat.
  4. Add taco seasoning and a little water; simmer for a few minutes.
  5. Stuff each pepper with the beef mixture and place in a baking dish.
  6. Top with shredded cheese and bake for 20-25 minutes.
