- 4 cups of broccoli florets, chopped
- 3 medium potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup milk or cream
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
- Pour in the broth and add the potatoes and broccoli. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes.
- Remove from heat, stir in milk and cheese until melted. Season with salt and pepper.
- Blend for a smoother consistency, then serve hot, garnished with extra cheese or croutons.
