  • 1 tbsp olive oil
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/4 tsp black pepper
  • 1 1/3 cups crispy fried onions, divided

Instructions

  1. Wash and trim fresh green beans, cutting them into bite-sized pieces and blanch in boiling water for 5 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until softened, about 5 minutes. Add minced garlic and sauté for another minute.
  3. In a bowl, combine the blanched green beans, sautéed onion and garlic mixture, mushroom soup, milk, and black pepper. Fold in 2/3 cup of crispy fried onions.
  4. Pour the mixture into a greased 9×13 inch baking dish, top with remaining fried onions, and bake in a preheated oven at 350°F (175°C) for 20-25 minutes until bubbly and golden brown.
