- 1.5 lbs fresh green beans, trimmed
- 1 tbsp olive oil
- 1/2 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 (10.75 oz) can condensed cream of mushroom soup
- 1/2 cup milk
- 1/4 tsp black pepper
- 1 1/3 cups crispy fried onions, divided
Instructions
- Wash and trim fresh green beans, cutting them into bite-sized pieces and blanch in boiling water for 5 minutes. Drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until softened, about 5 minutes. Add minced garlic and sauté for another minute.
- In a bowl, combine the blanched green beans, sautéed onion and garlic mixture, mushroom soup, milk, and black pepper. Fold in 2/3 cup of crispy fried onions.
- Pour the mixture into a greased 9×13 inch baking dish, top with remaining fried onions, and bake in a preheated oven at 350°F (175°C) for 20-25 minutes until bubbly and golden brown.
Notes
- Fresh green beans make a noticeable difference in texture and flavor.
- Don’t overcook green beans during blanching to retain crispness.
- Reserve some fried onions to add in the last few minutes of baking.
- Customize by adding cooked mushrooms, bacon bits, or shredded cheese.
