- 1 whole turkey (12-14 lbs)
- Salt and black pepper to taste
- 1/4 cup olive oil
- 2 cups mashed potatoes
- 2 cups sweet yams, sliced
- 1 cup cornmeal
- 1/2 cup flour
- 1/4 cup sugar
- 1 cup milk
- 2 eggs
- 2 tablespoons butter
Instructions
- Preheat oven to 375°F (190°C). Season the turkey with salt and pepper, then brush with olive oil.
- Roast the turkey uncovered for about 3 hours, or until internal temperature reaches 165°F.
- Prepare mashed potatoes and set aside. Roast sweet yams until tender, about 30 minutes.
- Mix cornbread batter with cornmeal, flour, sugar, milk, eggs, and melted butter. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes.
- Arrange the cooked turkey, sides, and bread on a festive platter. Serve warm and enjoy.
