- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- For the cinnamon swirl:
- ½ cup brown sugar
- 1 tablespoon ground cinnamon
- Optional glaze or cream cheese frosting for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan using nonstick cookware or line it with parchment paper.
- In a large bowl, mash the ripe bananas until smooth. Add the melted butter, eggs, and vanilla extract, whisking until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and sugar. Gradually add the dry ingredients to the wet, stirring until just combined.
- Mix the brown sugar and ground cinnamon in a small bowl to prepare the cinnamon swirl.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter.
- Add the remaining batter and sprinkle with the rest of the cinnamon sugar. Use a knife or skewer to swirl the cinnamon into the batter.
- Bake for 60–70 minutes until a toothpick inserted into the center comes out clean. Cool slightly before removing from the pan.
Notes
- Store leftover bread in an airtight container at room temperature for 2–3 days or refrigerate for up to a week.
- Wrap slices tightly and freeze for up to 3 months for longer storage.
- Reheat slices in microwave or oven before serving for best flavor.
