- 1 pound (450g) carrots, sliced into rounds
- 2 tablespoons butter
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a pot of water to a boil and cook the carrots until tender, about 5 minutes. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add honey, cinnamon, salt, and pepper, stirring to combine.
- Add the cooked carrots to the skillet and toss to coat evenly in the glaze. Cook for an additional 2-3 minutes until caramelized and glossy.
- Garnish with chopped fresh parsley and serve warm.
Notes
- For a vegan version, substitute butter with coconut oil and honey with agave syrup.
- Adjust sweetness by adding more honey or maple syrup as desired.
