- 4 cod fillets
- 1 cup coconut milk
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Season cod fillets with salt and pepper.
- Place fillets in a baking dish and drizzle with olive oil.
- Bake for 15-20 minutes until flaky.
- Meanwhile, in a saucepan, heat coconut milk with garlic and lemon juice over medium heat.
- Simmer until slightly thickened, about 5 minutes.
- Pour coconut lemon sauce over baked cod, garnish with parsley, and serve.

- Adjust cooking time based on thickness of fillets.
- Can substitute lime juice for lemon for a different tang.
