- 4 boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 cup shredded pepper jack cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat grill to medium-high heat.
- Brush chicken breasts with olive oil and season with salt and pepper.
- Grill chicken about 6-7 minutes per side until cooked through.
- During last few minutes, top each chicken with salsa verde and sprinkle with shredded pepper jack cheese.
- Cover grill to melt cheese, about 2 minutes.
- Remove from grill, garnish with cilantro, and serve with lime wedges.
Notes
- Use freshly prepared salsa verde for best flavor.
- For extra spice, add sliced jalapenos on top before melting cheese.
