- 4 large bell peppers (red, green, or yellow)
- 1 pound ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant.
- Add ground beef, cook until browned. Season with salt and pepper.
- Mix in cooked rice and cook for another 2 minutes.
- Stuff each bell pepper with the beef and rice mixture, place in a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with chopped parsley before serving.

- For a healthier option, use lean ground turkey or chicken.
