- 2 cups cooked and mashed potatoes (ideally leftover or freshly prepared)
- 1 cup all-purpose flour
- 1/2 cup shredded cheese (cheddar or your favorite)
- 2 large eggs
- 1/4 cup milk or cream
- 2 tablespoons melted butter or olive oil
- 1 teaspoon baking powder
- Salt and pepper to taste
- Optional add-ins: chopped chives, cooked bacon bits, or diced ham
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a large mixing bowl, combine mashed potatoes, flour, cheese, eggs, milk, and melted butter. Mix until smooth. Season with salt and pepper, and add optional ingredients if desired.
- Scoop batter into muffin cups, filling about 3/4 full. Smooth tops with a spoon or spatula.
- Bake for 20-25 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Allow muffins to cool slightly before removing from the tin. Serve warm with sour cream or your favorite dipping sauce.

- For extra flavor, mix in chopped chives, cooked bacon, or diced ham.
- Use leftover mashed potatoes for convenience and enhanced flavor.
