Ingredients

  • 2 bunches scallions, thinly sliced
  • 2-inch piece of ginger, peeled and minced
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 4 cups mixed greens (spinach, kale, or bok choy)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the fish fillets under cold water and pat them dry with paper towels. Season lightly with salt and pepper.
  2. In a small bowl, combine the soy sauce, sesame oil, rice vinegar, and sugar. Mix well until the sugar is dissolved. SautΓ© half of the minced ginger and half of the sliced scallions in a skillet over medium heat until fragrant, then add the soy sauce mixture and heat through.
  3. Place the seasoned fish fillets in a steamer basket and steam over boiling water for about 8-10 minutes until cooked through.
  4. Heat olive oil in a large skillet, add mixed greens, and sautΓ© until wilted. Season with salt and pepper.

Notes

  • For a spicier kick, add red pepper flakes to the sauce.
  • Use different greens such as water spinach for variety.
  • Add a splash of Shaoxing wine for depth of flavor.
  • Bake fish in the oven at 375Β°F (190Β°C) for 12-15 minutes if you don’t have a steamer.
