- 1 pound white fish fillets (cod, sea bass, or tilapia work well)
- 2 bunches scallions, thinly sliced
- 2-inch piece of ginger, peeled and minced
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 4 cups mixed greens (spinach, kale, or bok choy)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Rinse the fish fillets under cold water and pat them dry with paper towels. Season lightly with salt and pepper.
- In a small bowl, combine the soy sauce, sesame oil, rice vinegar, and sugar. Mix well until the sugar is dissolved. Sauté half of the minced ginger and half of the sliced scallions in a skillet over medium heat until fragrant, then add the soy sauce mixture and heat through.
- Place the seasoned fish fillets in a steamer basket and steam over boiling water for about 8-10 minutes until cooked through.
- Heat olive oil in a large skillet, add mixed greens, and sauté until wilted. Season with salt and pepper.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- Use different greens such as water spinach for variety.
- Add a splash of Shaoxing wine for depth of flavor.
- Bake fish in the oven at 375°F (190°C) for 12-15 minutes if you don’t have a steamer.
