Experience the heartwarming flavors of Ireland with our Golden Roasted Sausages & Sweet Potato Mash. This easy recipe combines roasted sausages with creamy sweet potato mash for a comforting and delicious family meal.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 68 high-quality sausages (such as Irish bangers)
  • 2 large sweet potatoes, peeled and cubed
  • 1 red onion, quartered
  • 2 carrots, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup milk or cream
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine sweet potatoes, red onion, and carrots. Drizzle with olive oil, sprinkle with thyme, salt, and pepper. Toss to coat, then add sausages. Arrange on a baking sheet.
  2. Roast for 25-30 minutes until sausages are golden and vegetables are tender. Flip sausages halfway through cooking for even browning.
  3. While roasting, prepare the sweet potato mash. Boil sweet potatoes until tender, drain, and return to the pot. Add milk, butter, salt, and pepper, then mash until smooth.
  4. Serve mash with roasted sausages and vegetables on the side. Enjoy your Irish feast!

Notes

  • For extra flavor, add minced garlic to vegetables before roasting.
  • Regular potatoes can be substituted for sweet potatoes.
  • Add a splash of apple cider vinegar to the mash for a tangy twist.
  • Serve with gravy or apple sauce for added richness.
  • Experiment with different sausages for unique flavors.
