Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm water (110°F)
  • 1 packet (2¼ tsp) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • ½ red onion, thinly sliced
  • 1 tsp dried oregano
  • Fresh basil leaves for garnish

Instructions

  1. Mix warm water, sugar, and yeast in a bowl. Let it sit until frothy, about 5 minutes.
  2. In another bowl, combine flour and salt. Pour the yeast mixture and olive oil into the flour and knead until smooth. Cover and let it rise for about 1 hour.
  3. While the dough is rising, slice the bell pepper, onion, and halve the cherry tomatoes. Mix the feta cheese with dried oregano.
  4. Once the dough has risen, roll it out on a floured surface until it’s about 12 inches in diameter. Transfer to a baking sheet or pizza stone, layer with mozzarella, vegetables, and crumbled feta.
  5. Preheat the oven to 475°F (245°C). Bake the pizza for 12-15 minutes until the crust is golden and cheese is bubbly. Let cool and garnish with fresh basil before slicing.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat leftovers in the oven at 350°F (175°C) for about 10 minutes for a crispier crust.
