Instructions
- Cook rice according to package instructions and set aside.
- Prepare sweet potatoes: toss with olive oil, paprika, salt, and pepper, then roast for 25-30 minutes.
- Cook diced chicken in a skillet over medium heat until golden brown and cooked through, about 7-8 minutes.
- Steam mixed vegetables until tender.
- Assemble rice bowls with rice, chicken, roasted sweet potatoes, and vegetables. Garnish with herbs and serve with sauce.
