- 2 large sweet potatoes, cubed
- 2 chicken breasts, sliced
- 2 cups mixed greens
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup hummus or favorite sauce
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes until tender.
- While potatoes roast, season chicken slices with salt and pepper. Grill or sauté in 1 tbsp olive oil until cooked through, about 7-8 minutes.
- Arrange cooked sweet potatoes, chicken, and mixed greens in bowls. Drizzle with hummus or preferred sauce.
