- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can red beans (15 oz), drained
- 1 cup corn kernels
- 4 cups beef broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add ground beef and cook until browned, then drain excess fat.
- Add diced onion and garlic; sauté until translucent.
- Stir in diced tomatoes, beans, corn, broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes, stirring occasionally.
- Serve hot, garnished with fresh herbs if desired.
Notes
- Can be made vegetarian by replacing beef with plant-based protein or extra vegetables.
- Adjust chili powder for spice preference.
