Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced (about 2 cups)
  • 1 cup carrots, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1½ tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large cast-iron skillet over medium-high heat. Add ground beef and cook until browned, breaking into crumbles. Drain excess fat.
  3. Return skillet to heat; add onion and garlic. Cook until softened, about 3 minutes.
  4. Add potatoes, carrots, green beans, beef broth, salt, pepper, and paprika. Stir to combine.
  5. Transfer skillet to oven; bake covered with lid or foil for 30 minutes.
  6. Remove foil, sprinkle cheese on top, and bake uncovered for another 10–12 minutes, or until cheese is melted and bubbly.
  7. Garnish with fresh parsley before serving.

Notes

  • For added flavor, Top with crumbled bacon or a dollop of sour cream before serving.
  • Doubled quantities can be baked in a 9×13-inch baking dish for larger groups.
  • Leftovers reheat well and make great meal prep for up to 4 days.
