- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced (about 2 cups)
- 1 cup carrots, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1½ tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large cast-iron skillet over medium-high heat. Add ground beef and cook until browned, breaking into crumbles. Drain excess fat.
- Return skillet to heat; add onion and garlic. Cook until softened, about 3 minutes.
- Add potatoes, carrots, green beans, beef broth, salt, pepper, and paprika. Stir to combine.
- Transfer skillet to oven; bake covered with lid or foil for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for another 10–12 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, Top with crumbled bacon or a dollop of sour cream before serving.
- Doubled quantities can be baked in a 9×13-inch baking dish for larger groups.
- Leftovers reheat well and make great meal prep for up to 4 days.
