Ingredients

  • 1 lb beef stew meat, cut into chunks
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 2 potatoes, diced
  • 1 cup green beans, chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown beef chunks over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onion, carrots, celery, and garlic until vegetables are tender.
  3. Add beef back to the pot along with diced tomatoes, beef broth, potatoes, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5 hours until beef is tender.
  5. Add green beans during the last 10 minutes of cooking.
