- 1 lb beef stew meat, cut into chunks
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 2 potatoes, diced
- 1 cup green beans, chopped
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown beef chunks over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion, carrots, celery, and garlic until vegetables are tender.
- Add beef back to the pot along with diced tomatoes, beef broth, potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until beef is tender.
- Add green beans during the last 10 minutes of cooking.

- Use lean beef for a healthier option.
- You can add other seasonal vegetables like peas or corn.
