- 4 cups ripe tomatoes chopped
- 1 small onion chopped
- 2 cloves garlic minced
- 2 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add chopped tomatoes and cook for 10 minutes, stirring occasionally.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Season with salt and pepper, garnish with basil, and serve hot.

- Can be blended in batches if using a regular blender.
