Instructions
- Mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press into a 9-inch pie pan and chill for 15 minutes.
- In a saucepan, combine lemon juice, lemon zest, honey, and salt. Heat until simmering. Bloom gelatin in cold water, then stir into hot lemon mixture until dissolved. Let cool.
- Whip heavy cream until soft peaks form. Fold in the cooled lemon-honey mixture gently until smooth.
- Pour filling into the prepared crust, smooth the top, and refrigerate for at least 4 hours until set and chilled.
