Instructions
- Cook the rice according to package instructions and set aside.
- Season chicken breasts with salt, pepper, lime zest, and juice.
- Heat olive oil in a skillet over medium heat, cook chicken until golden and cooked through, about 6-8 minutes each side.
- In the last 2 minutes, drizzle honey over the chicken and let it caramelize slightly.
- Slice the cooked chicken and prepare the rice bowls.
- Assemble by placing rice in a bowl, topping with sliced chicken, avocado, and fresh herbs. Garnish with lime wedges and additional herbs if desired.
Notes
- For added flavor, marinade the chicken in lime juice and honey for 30 minutes before cooking.
- Use jasmine or basmati rice for a more fragrant base.
