- 4 boneless, skinless chicken breasts
- 1 pound Brussels sprouts, trimmed and halved
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar

- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
- In a separate bowl, whisk together honey, Dijon mustard, apple cider vinegar, and remaining olive oil.
- Add Brussels sprouts to the bowl with chicken, drizzle with olive oil, salt, and pepper.
- Place seasoned chicken and Brussels sprouts on a lined baking sheet. Pour the honey mustard sauce over them.
- Bake for 20-25 minutes until chicken is cooked through and Brussels sprouts are tender.
Notes
- Marinate chicken in honey mustard sauce for at least 30 minutes for extra flavor.
- Add red pepper flakes for a spicy kick.
- Swap Brussels sprouts for broccoli or asparagus if desired.
- Serve over rice, quinoa, or mashed potatoes.
