- 1 ripe avocado, sliced or mashed

- 1 tablespoon mayonnaise or Greek yogurt (optional for spread)
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Butter or olive oil for grilling
Instructions
- Prepare the chicken by shredding cooked chicken or using store-bought rotisserie chicken.
- Mash the ripe avocado in a small bowl, mixing with lemon juice, salt, and pepper to create the avocado spread.
- Spread the avocado mixture on one side of each bread slice.
- Top with shredded chicken and a slice or two of cheese, then cover with the second slice of bread.
- Heat a skillet over medium heat and brush the outside of the sandwich with butter or olive oil.
- Cook each side for about 3-4 minutes until golden brown and cheese melts, pressing gently for even grilling.
