- 2 cups of fresh berries (strawberries, blueberries, or raspberries)
- 1 cup of sugar
- 2 tablespoons of cornstarch
- 1 teaspoon of lemon juice
- 1 package of pre-made pie crusts or homemade pastry dough
- 1 egg (for egg wash)
- Optional: powdered sugar for dusting
Instructions
- In a large mixing bowl, combine the berries with sugar, cornstarch, and lemon juice. Stir gently until the berries are well coated. Let sit for 10 minutes.
- Preheat oven to 375°F (190°C). Roll out the pie crusts on a floured surface. Place one crust in a pie dish and pour in the berry filling.
- Cover with the second crust, sealing the edges by pinching them together. Crimp the edges for a decorative finish.
- Beat the egg and brush it over the top crust. Cut a few small slits to vent steam. Bake for 45-50 minutes or until the crust is golden and crispy.
- Allow the pie to cool for 15 minutes. Dust with powdered sugar if desired. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
Notes
- Thaw frozen berries before use and drain excess water.
- Use a fork or your fingers to crimp the edges for a decorative look.
- You can add vanilla extract or cinnamon to enhance flavor.
- Pie can be stored in an airtight container in the refrigerator for up to 3 days.
