Instructions
- Preheat oven to 350°F (175°C). Grease a standard loaf pan and set aside.
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
- In a separate bowl, combine Greek yogurt, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract. Mix until smooth.
- Gradually add the wet ingredients to the dry, stirring gently until just combined. Do not overmix.
- Gently fold in the blueberries, tossing them in a tablespoon of flour beforehand to prevent sinking.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
