- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/2 cup unsalted butter
- 1 pound green beans, trimmed
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium heat. Add chicken thighs skin-side down and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Add lemon juice and butter, stirring until melted and combined.
- Return the chicken thighs to the skillet, spooning the sauce over them. Add green beans around the chicken. Cover and cook for 10-15 minutes until chicken is cooked through and green beans are tender.
- Garnish with chopped parsley and serve hot with extra lemon if desired.
Notes
- Use fresh lemon juice for the best flavor.
- Adjust cooking time based on thigh size for perfect doneness.
- Can be baked in the oven at 375F (190C) for 35-40 minutes as an alternative.
