- 1 pre-made pizza crust or homemade crust
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- Fresh basil leaves for garnish
- Salt and black pepper to taste
- Optional: thinly sliced lemon rounds for topping
Instructions
- In a small bowl, whisk together the fresh lemon juice and olive oil. Add a pinch of salt and pepper.
- Spread ricotta cheese evenly over the pizza crust. Drizzle with half of the lemon mixture.
- Sprinkle shredded mozzarella cheese over the ricotta and add lemon zest.
- Preheat oven to 425°F (220°C). Bake the pizza for 12-15 minutes or until the crust is golden and cheese is bubbly. Add lemon slices on top in the last few minutes if desired.
- Remove from oven. Garnish with fresh basil leaves and a drizzle of olive oil. Slice and serve immediately.
