Instructions
- Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray, or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
- In another bowl, whisk the brown sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
- Add the dry ingredients to the wet mixture gradually, stirring gently until just combined. Fold in optional chocolate chips or chopped nuts if desired.
- Pour the batter into the prepared loaf pan. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil if the crust darkens too quickly.
- Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra moistness, add chopped nuts or chocolate chips to the batter.
- Store in an airtight container at room temperature for 2 days or freeze for up to 3 months.
