- 1 lb baby potatoes
- 2 tbsp olive oil
- 1/2 cup shredded cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Fresh herbs for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a bowl, toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Arrange on a baking sheet and bake for 20-25 minutes until crispy and golden.
- Sprinkle with cheese and return to oven for 3-5 minutes until melted.
- Garnish with fresh herbs and serve warm.
