- 1 cup cooked chicken, shredded
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper

- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional: Salsa, sour cream, guacamole for serving
Instructions
- Prepare the Chicken and Vegetables: Shred the cooked chicken and dice the onion and bell pepper.
- Sauté the Filling: Heat olive oil in a skillet, add onion and bell pepper, sauté for 5 minutes, then add chicken and seasonings.
- Assemble the Quesadilla: Layer cheese, chicken filling, and more cheese between tortillas.
- Cook and ‘Bloom’ the Quesadilla: Cook in a skillet until golden brown, then cut slits for a blooming effect.
