- 12 oz of your favorite pasta (penne, fettuccine, or spaghetti)
- 2 cups of cooked chicken, shredded or diced (see options here)
- 1/2 cup of freshly grated parmesan cheese (more cheese recipes)
- 1/2 cup of homemade or store-bought pesto (easy pesto recipe)
- 1 cup of heavy cream or Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and black pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook the pasta in boiling salted water until al dente, then drain and set aside.
- In a skillet, heat olive oil over medium heat, add cooked chicken, and sauté until warmed through and slightly browned.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in heavy cream or Greek yogurt, stirring continuously, then add pesto sauce and simmer for 2-3 minutes.
- Stir in grated parmesan cheese and season with salt and pepper.
- Add cooked pasta to the sauce and toss to coat evenly.
- Incorporate the shredded chicken into the pasta and sauce mixture.
- Garnish with fresh basil leaves before serving.
Notes
- For an extra cheesy flavor, sprinkle additional parmesan on top before serving.
- You can substitute Greek yogurt with heavy cream for a richer texture.
- Use a variety of pasta shapes like fusilli or rigatoni for a different presentation.
