  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 4-5 ripe peaches, sliced
  • 1 sheet of cold puff pastry or pie crust
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, diced
  • 1 egg, beaten (for egg wash)
  • Optional: for added flavor, sprinkle cinnamon or nutmeg

Instructions

  1. Wash and slice the peaches, then toss them with sugar, flour, lemon juice, and vanilla extract to season and thicken the filling.
  2. Thaw the puff pastry or prepare your homemade pie crust. Roll it out slightly to an even thickness and place on a parchment-lined baking sheet.
  3. Arrange the peach slices in the center of the pastry, leaving about 2 inches of border around the edges, overlapping slices slightly.
  4. Gently fold the edges of the pastry over the peaches, pleating as needed to create a rustic look. Brush the crust with beaten egg and dot the filling with small pieces of butter.
  5. Preheat the oven to 400°F (200°C). Bake the galette for 40-45 minutes until the crust is golden and the filling bubbles, keeping an eye to prevent over-browning.
  6. Allow to cool slightly before serving. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

  • Use fully ripe peaches for the best flavor and sweetness.
  • Chill the puff pastry before rolling for easier handling.
  • Add a pinch of cinnamon or nutmeg to enhance the peach flavor.
  • This galette can be prepared a day in advance; refrigerate and bake just before serving.
