- 4-5 ripe peaches, sliced
- 1 sheet of cold puff pastry or pie crust
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, diced
- 1 egg, beaten (for egg wash)
- Optional: for added flavor, sprinkle cinnamon or nutmeg
Instructions
- Wash and slice the peaches, then toss them with sugar, flour, lemon juice, and vanilla extract to season and thicken the filling.
- Thaw the puff pastry or prepare your homemade pie crust. Roll it out slightly to an even thickness and place on a parchment-lined baking sheet.
- Arrange the peach slices in the center of the pastry, leaving about 2 inches of border around the edges, overlapping slices slightly.
- Gently fold the edges of the pastry over the peaches, pleating as needed to create a rustic look. Brush the crust with beaten egg and dot the filling with small pieces of butter.
- Preheat the oven to 400°F (200°C). Bake the galette for 40-45 minutes until the crust is golden and the filling bubbles, keeping an eye to prevent over-browning.
- Allow to cool slightly before serving. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

- Chill the puff pastry before rolling for easier handling.
