Instructions

  1. Begin by dicing the chicken breasts into bite-sized pieces. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Add the sliced mushrooms and minced garlic, cooking for another 3-5 minutes until the mushrooms are tender.
  2. Add the diced chicken to the skillet with the vegetables. Season with dried thyme, dried rosemary, salt, and pepper. Cook until the chicken is browned on all sides. Sprinkle the all-purpose flour over the chicken and vegetables, stirring to coat evenly. Gradually pour in the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until the sauce has thickened, about 5-7 minutes.
  3. Remove the skillet from the heat and stir in the heavy cream. Ensure everything is well combined. Pour the chicken and vegetable mixture into a 9×13 inch casserole dish, spreading it out evenly.
  4. Preheat your oven to 375°F (190°C). Sprinkle the shredded Gruyère cheese evenly over the top of the casserole. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown. Let the casserole cool for a few minutes before serving. Garnish with fresh parsley.
