- 4 large potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 4 slices bacon, cooked and crumbled
- 1/2 cup milk or cream (optional, for extra creaminess)
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Instructions
- In a large pot, place diced potatoes and add the chicken or vegetable broth. Bring to a boil, then simmer for 15-20 minutes until tender.
- Melt butter in a separate pan, add chopped onion and cook until softened. Then, add minced garlic and cook for another minute.
- Transfer half of the potato mixture to a blender and blend until smooth. Pour it back into the pot with the remaining potatoes.
- Add the sautéed onions and garlic, crumbled bacon, and optional milk or cream. Season with salt and pepper and simmer for 5 minutes.

- For a vegetarian version, skip the bacon or use vegetarian bacon bits.
- Add carrots, celery, or leeks for added nutrients and flavor.
- Try different potatoes like Yukon Gold or red for varied taste.
- Garnish with a dollop of sour cream or Greek yogurt.
