  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can enchilada sauce
  • 1 cup shredded cheddar cheese
  • 68 flour tortillas
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Drain off excess grease. Add the chopped onion and minced garlic, cooking until softened, about 5 minutes.
  2. In a separate bowl, mash the drained and rinsed black beans until mostly smooth. Optionally, add a spoonful of enchilada sauce for added flavor.
  3. Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch baking dish. Arrange two tortillas on the bottom, then layer with half of the beef mixture, half of the black beans, and some cheese. Repeat the layers, finishing with tortillas and remaining enchilada sauce.
  4. Sprinkle remaining cheese on top. Bake in the oven for 20-25 minutes, or until cheese is melted and bubbly. Let cool slightly before serving with your choice of toppings.
