- 4 large Italian sausages (mild or spicy, as preferred)
- 3 bell peppers (red, yellow, and green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and freshly ground black pepper to taste
- Optional: red pepper flakes for extra heat
- Fresh parsley for garnish
Instructions
- Start by slicing the bell peppers and onion into strips. Mince the garlic cloves. Set all aside for easy access during cooking.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Once cooked, remove sausages from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil if needed. Toss in the sliced bell peppers, onion, and garlic. Sauté for about 5-7 minutes until vegetables are tender and slightly caramelized. Season with dried oregano, smoked paprika, salt, and pepper.
- Slice the cooked sausages into bite-sized pieces and return them to the skillet. Stir everything together and cook for an additional 3-4 minutes to meld the flavors. Garnish with fresh parsley before serving.

- For extra flavor, add fresh Parmesan cheese or serve with crusty bread.
- Adjust spice levels with red pepper flakes according to your taste.
