Instructions
- Start by preheating your oven to 350°F (175°C). In a large bowl, cream together butter and sugar until smooth.
- Add the egg and vanilla extract, and mix until well combined. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a uniform dough forms. Fold in chocolate chips if desired.
- Using a tablespoon or cookie scoop, portion the dough onto a lined baking sheet. Slightly flatten each cookie.
- Bake in the preheated oven for about 10-12 minutes. Remove and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For softer biscuits, do not overbake. They will firm up as they cool.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- Reheat briefly in the microwave for a softer texture.
