- 1 cup of diced cooked ham
- 1/2 cup of chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon of dried thyme
- Salt and pepper to taste
- Optional: 1/4 cup heavy cream or milk for added richness
- Optional: Fresh parsley or chives for garnish
Instructions
- Sauté the chopped onion and minced garlic over medium heat until softened and fragrant, about 5 minutes.
- Add the diced potatoes and broth to the pot. Season with dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in the diced cooked ham and heat through for another 5 minutes.
- For a creamier consistency, stir in heavy cream or milk just before serving, and garnish with fresh parsley or chives.
Notes
- For a thicker soup, mash some of the potatoes before adding the ham.
- Add other vegetables like carrots, celery, or corn for extra nutrients and flavor.
- If you don’t have fresh garlic, garlic powder can be used as a substitute.
- Use different types of broth, such as ham broth, for a richer flavor.
- Spice it up with a pinch of red pepper flakes for some heat.
