- 3 cups cooked, shredded chicken
- 1 small onion, diced

- 1 (10.75 oz) can condensed cream of chicken soup
- 1 cup sour cream
- 1 packet (1 oz) dry ranch dressing mix
- 1 sleeve Ritz crackers, crushed
- 1/2 cup melted butter
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked, shredded chicken, diced onion, minced garlic, and diced red bell pepper. Mix well.
- In a separate bowl, whisk together the condensed cream of chicken soup, sour cream, and dry ranch dressing mix until smooth.
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish. Add the chicken mixture to the baking dish, then pour the creamy sauce evenly over the top.
- In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture over the top of the casserole. Bake for 20-25 minutes, or until golden brown and bubbly.
