Quick Turkey Noodle Casserole Recipe for Busy Nights: A comforting and easy meal that combines leftover turkey and egg noodles in a creamy sauce. Perfect for busy weeknights.

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 pound egg noodles
  • 2 cups cooked turkey, shredded or diced
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the egg noodles according to the package directions. Drain and set aside.
  2. In a large bowl, combine cooked egg noodles, shredded turkey, cream of mushroom soup, milk, and frozen mixed vegetables. Season with salt and pepper, mixing well.
  3. Pour the mixture into a lightly greased 9×13 inch baking dish, spreading it evenly.
  4. In a small bowl, mix shredded cheddar cheese, breadcrumbs, and melted butter. Sprinkle this over the casserole. Bake for 20-25 minutes until bubbly and golden brown.

Notes

  • Add different vegetables like peas, carrots, or green beans for extra nutrients and flavor.
  • Use different cheeses such as mozzarella or provolone for a unique twist.
  • For a spicier kick, add a dash of hot sauce or some diced jalapeños.
  • If you don’t have leftover turkey, ground turkey works just as well!
  • To make it even quicker, use pre-cooked noodles or frozen vegetables.
