  • 2–3 tablespoons water (to thin the dressing)

Instructions

  1. Wash and thinly slice the cucumbers and place them in a large bowl.
  2. Add chopped peanuts, cilantro, red onion, and red bell pepper to the cucumbers and toss gently.
  3. In a separate bowl, whisk together peanut butter, rice vinegar, soy sauce, honey (or maple syrup), sesame oil, garlic, ginger, and red pepper flakes. Thin with water to desired consistency.
