- 1 pound fresh salmon fillets, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup green onions, finely chopped
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 egg, beaten
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Prepare the salmon by ensuring fillets are skinless and chop into small pieces.
- In a mixing bowl, combine the chopped salmon with breadcrumbs, green onions, mayonnaise, Dijon mustard, beaten egg, and lemon juice. Season with salt and pepper, and mix well.
- Shape the salmon mixture into patties about 2 inches in diameter.
- Heat olive oil in a frying pan over medium heat and cook patties for 4-5 minutes on each side until golden brown and crispy.
Notes
- Serve with salad, on a bun with tartar sauce, or alongside roasted vegetables.
- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze with parchment paper between patties. Reheat in a pan or toaster oven.
- Feel free to add diced bell peppers or herbs for more flavor.
