Ingredients
Scale
- 1.5 lbs grass-fed beef (ground beef)
- 4 slices bacon
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup oats or breadcrumbs (for binding)
- 1 egg
- 1/4 cup tomato sauce or ketchup
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) optional for added flavor
Instructions
- Preheat your oven to 375°F (190°C). In a large mixing bowl, combine ground beef, chopped onion, minced garlic, oats or breadcrumbs, egg, tomato sauce, Worcestershire sauce, salt, and pepper. Mix thoroughly until well incorporated.
- Transfer the mixture onto a baking sheet or loaf pan. Shape into a loaf shape. Wrap bacon slices around the top and sides, overlapping for a crispy crust.
- Bake in the preheated oven for approximately 50-60 minutes, until the internal temperature reaches 160°F (71°C). Broil for an additional 2-3 minutes for extra crispiness if desired.
Notes
- Allow the meatloaf to cool completely before storing to prevent sogginess.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat slices in the microwave or oven before serving.
- For gluten-free options, substitute oats or breadcrumbs with crushed nuts or gluten-free oats.
