- 1 lb (450g) beef stew meat, cubed
- 1 large onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup cold water
- 1 egg, beaten (for egg wash)
Instructions
- In a large skillet, brown the beef stew meat over medium-high heat until browned on all sides. Add chopped onions, carrots, and celery; sauté until vegetables are tender. Stir in minced garlic and cook for another minute. Pour in beef broth, tomato paste, thyme, salt, and pepper. Simmer for 20-25 minutes until the mixture thickens and flavors meld. Let it cool before filling the pastries.
- In a mixing bowl, combine all-purpose flour and a pinch of salt. Cut in the cold butter using a pastry cutter or Fullstar Ultimate Veggie Prep Master until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat your oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into circles using a large cookie cutter or a drinking glass. Spoon a generous amount of beef stew filling onto one half of each dough circle. Fold over and seal the edges with a fork. Brush the tops with beaten egg for a golden finish.
- Arrange the assembled pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
